The people behind this coffee

The conversation continued after the cups were empty.

Seilyn poured a second round before we'd finished the first. Adolfo wanted to show us the drying beds before the light went. This is the Honey lot from that harvest: three weeks on the beds, turned by hand twice a day.

How we brew it

Let it rest a week. Then 1:16, 94°C.

Coffee isn't best the day it's roasted. This one peaks two to three weeks after the roast date on the bag. Pour-over or drip; a little coarser than you think.
